- 2 ripe bananas, mashed
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup vegetable oil (or melted butter)
- 1/2 cup buttermilk (or milk with a splash of vinegar)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the muffin tin with liners or non-stick spray.
- Mix the wet ingredients: bananas, sugar, cocoa powder, oil or butter, buttermilk, eggs, and vanilla.
- Combine dry ingredients: flour, baking soda, and salt in another bowl.
- Add dry mixture to wet ingredients, stir gently.
- Fold in chocolate chips.
- Pour batter into muffin tin, filling 2/3 full.
- Bake for 18 to 20 minutes until a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
