Ingredients

  • 16 ounces Italian sausage
  • 1/2 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery sticks, chopped
  • 4 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 14 ounces diced tomatoes with juice
  • 4 cups chicken broth
  • 2 (9 ounce) packages of cheese tortellini
  • 3/4 cup heavy whipping cream
  • 2 cups baby spinach
  • 1/2 teaspoon salt and pepper

Instructions

  • Cook Italian sausage and onion in a pan until browned. Add minced garlic towards the end.
  • Transfer mixture to an 8-quart slow cooker.
  • Stir in carrots, celery, crushed tomatoes, diced tomatoes, and chicken broth.
  • Cook on high for 3-4 hours or low for 7-8 hours. Switch to high heat if adding tortellini later.
  • 30 minutes before serving, add tortellini, heavy cream, spinach, salt, and pepper. Stir well.
  • Serve hot and enjoy!
