- 16 ounces Italian sausage
- 1/2 medium onion, chopped
- 2 carrots, sliced
- 2 celery sticks, chopped
- 4 cloves garlic, minced
- 28 ounces crushed tomatoes
- 14 ounces diced tomatoes with juice
- 4 cups chicken broth
- 2 (9 ounce) packages of cheese tortellini
- 3/4 cup heavy whipping cream
- 2 cups baby spinach
- 1/2 teaspoon salt and pepper
Instructions
- Cook Italian sausage and onion in a pan until browned. Add minced garlic towards the end.
- Transfer mixture to an 8-quart slow cooker.
- Stir in carrots, celery, crushed tomatoes, diced tomatoes, and chicken broth.
- Cook on high for 3-4 hours or low for 7-8 hours. Switch to high heat if adding tortellini later.
- 30 minutes before serving, add tortellini, heavy cream, spinach, salt, and pepper. Stir well.
- Serve hot and enjoy!
