- 2 bell peppers (any color)
- 1 red onion
- 1 tablespoon olive oil
- 1 pound chicken tenders or boneless, skinless chicken breasts, cut into slices
- 1.27 oz fajita seasoning (one packet)
Instructions
- Slice the bell peppers and red onion.
- Toss vegetables with olive oil and ¼ of the fajita seasoning.
- Prepare the crockpot with non-stick spray.
- Place sliced chicken in the crockpot, sprinkle with remaining fajita seasoning.
- Layer seasoned vegetables on top of the chicken.
- Cook on high for 2-3 hours until chicken is cooked and peppers are tender.
- Shred the chicken and serve with warm tortillas and toppings.
