- 4 strips bacon, diced
- ½ cup yellow onion, diced
- 1 red bell pepper, diced
- 4 – 6 cloves garlic, minced
- 2 cups chicken stock (or chicken broth, or bone broth)
- 8 cups fresh green beans, trimmed
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon dried minced onion
- ½ teaspoon dried minced garlic
- â…› teaspoon cayenne pepper
- ⅛ teaspoon crushed red pepper flakes (use ¼ tsp for more heat)
- 1 cup leftover ham, diced
- 1 ham hock (optional)
Instructions
- Cook bacon in a skillet until crispy.
- Remove bacon, and sauté onions and bell pepper in the bacon grease until onions are translucent.
- Add minced garlic and cook until fragrant.
- Combine green beans and diced ham in the crock pot.
- Add sautéed vegetables, seasoning, and broth to the pot.
- Cover and cook on low for 6-7 hours or on high for 4 hours.
