- 4 large (10-inch) flour tortillas

- 1 cup (113 g) Monterey jack cheese, shredded, divided
- 1 tablespoon vegetable oil, for pan-frying
- Sour cream, for serving

Instructions
- Cook the ground pork sausage in a skillet until browned, then add Kielbasa and brown.
- In the same skillet, cook the frozen hash browns, then add bell peppers, onion, jalapeno, and seasonings until soft.
- Scramble the eggs in a clean skillet with butter and optional seasoning.
- Prepare tortillas, layer cheese, meat mixture, eggs, and potatoes; roll up tightly.
- Fry burritos in vegetable oil until golden brown.
