  • 3 large eggs
  • ¾ cup (150 grams) granulated sugar
  • ¾ cup (177 ml) light corn syrup
  • 6 tablespoons (84 grams) butter, softened
  • 1 teaspoon (5 ml) vanilla extract
  • ½ teaspoon (3 grams) salt
  • ½ teaspoon (1 gram) ground cinnamon
  • 1 cup (180 grams) semisweet or dark chocolate chips
  • 1 teaspoon (6 grams) flaky sea salt (optional)

Instructions

  • Preheat oven to 350°F (175°C).
  • Line a 9×13-inch baking pan with parchment paper.
  • Cream together sugar and softened butter until creamy.
  • Mix in flour until it resembles sand.
  • Press crumbs into the bottom of the prepared pan.
  • Bake for 10-12 minutes until edges are golden.
  • Toast pecans on a baking sheet for 4-5 minutes until fragrant.
  • Whisk together eggs, granulated sugar, corn syrup, butter, vanilla, salt, and cinnamon.
  • Stir in toasted pecans.
  • Sprinkle chocolate chips over cooled shortbread crust, pour filling over.
  • Bake for 30-35 minutes until filling is set.
  • Cool completely before slicing into bars.
