Ingredients

  • â…“ cup light corn syrup
  • 5 tablespoons unsalted butter softened
  • 1 ½ teaspoons mint extract
  • ½ teaspoon salt
  • green gel food coloring
  • 4 to 5 cups powdered sugar
  • 10 ounces chocolate candy coating (ghirardelli melting wafers, almond bark, candiquik, etc.)

Instructions

  1. In a medium bowl, mix together corn syrup, butter, mint extract, salt, and green gel food coloring until well blended.
  2. Gradually add powdered sugar, one cup at a time, until the mixture becomes too stiff to stir.
  3. Knead in more powdered sugar until it no longer sticks to your hands, adding more if needed.
  4. Roll the mixture out between two sheets of parchment paper and refrigerate for 60-90 minutes until firm, or form into 1-inch balls, flatten, and refrigerate.
  5. Cut out the patties using a small round cutter.
  6. Melt the chocolate candy coating following the package instructions.
  7. Dip each patty into the melted chocolate, shake off excess, and place back on parchment paper.
  8. Allow the chocolate to set before storing the patties in an airtight container.
