  • 1 cup (8 ounces; 240ml) heavy cream or heavy whipping cream
  • 1 and 1/2 cups (345g) mashed bananas (about 4 medium or 3 large ripe bananas)
  • 3 cups (375g) all-purpose flour (spooned & leveled)
  • 1 and 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light or dark brown sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 and 1/3 cups (320ml) buttermilk, at room temperature

Instructions

  • Make the ganache by heating cream and mixing it with chopped chocolate until smooth.
  • Preheat oven to 350°F (177°C) and grease a 10-inch Bundt pan.
  • Mash bananas, then mix butter and sugars until creamy. Add eggs, vanilla, and bananas.
  • Combine dry ingredients and alternate mixing with buttermilk. Do not over-mix.
  • Layer batter and ganache in the pan, swirling for a marbled effect.
  • Bake for 60 to 75 minutes, checking for doneness with a toothpick.
  • Cool cake in pan for 2 hours before inverting onto a wire rack.
  • Reheat reserved ganache and drizzle over the cooled cake.
