- 2 (4-ounce) quality semi-sweet chocolate bars, finely chopped (113g each)
- 1 cup (8 ounces; 240ml) heavy cream or heavy whipping cream
- 1 and 1/2 cups (345g) mashed bananas (about 4 medium or 3 large ripe bananas)
- 3 cups (375g) all-purpose flour (spooned & leveled)
- 1 and 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) packed light or dark brown sugar
- 3 large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 1 and 1/3 cups (320ml) buttermilk, at room temperature
Instructions
- Make the ganache by heating cream and mixing it with chopped chocolate until smooth.
- Preheat oven to 350°F (177°C) and grease a 10-inch Bundt pan.
- Mash bananas, then mix butter and sugars until creamy. Add eggs, vanilla, and bananas.
- Combine dry ingredients and alternate mixing with buttermilk. Do not over-mix.
- Layer batter and ganache in the pan, swirling for a marbled effect.
- Bake for 60 to 75 minutes, checking for doneness with a toothpick.
- Cool cake in pan for 2 hours before inverting onto a wire rack.
- Reheat reserved ganache and drizzle over the cooled cake.
