- 4 cups diced or shredded cooked chicken (preferably rotisserie)
- 1 cup halved green grapes
- ½ cup diced small celery
- 2 scallions (thinly sliced)
- 2 tablespoons fresh chopped parsley
- ¾ cup mayonnaise
- Zest of ½ a lemon
- 1 teaspoon minced garlic (or 1 small clove)
- 1 tablespoon Dijon mustard
- 2 teaspoons freshly squeezed lemon juice
- 1 teaspoon granulated sugar
- ½ teaspoon Worcestershire sauce
- ½ teaspoon kosher salt
- ¼ teaspoon sweet paprika
- ¼ teaspoon black pepper
Instructions
- In a large bowl, combine chicken, grapes, celery, scallions, and parsley.
- In another bowl, whisk mayonnaise, lemon zest, garlic, Dijon mustard, lemon juice, sugar, Worcestershire sauce, salt, paprika, and black pepper until smooth.
- Add dressing to the salad ingredients and gently stir to combine.
- Serve immediately, or chill for 30 minutes for flavors to meld.
