- 2 garlic cloves, minced (for sautéing)
- 6 cups romaine lettuce, chopped
- 1 avocado, diced
Instructions
- Whisk together lime juice, olive oil, minced garlic, cilantro, honey, chili powder, salt, and red pepper flakes for dressing.
- Mix chili powder, cumin, garlic powder, smoked paprika, salt, and oregano for fajita seasoning.
- Rub half of the seasoning on chicken thighs and cook in olive oil until golden brown, then slice.
- Sauté bell peppers and onions, adding remaining seasoning and garlic until softened.
- Layer romaine, sautéed veggies, chicken, and avocado in a bowl. Drizzle with dressing.
