  • 1½ cups cooked chicken diced or shredded, preferably rotisserie
  • ½ cup shredded monterey jack cheese mild flavor
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper freshly ground
  • ¼ cup grape tomatoes halved
  • 1 cup fresh spinach leaves washed and dried
  • 3 spinach tortillas or any soft tortilla of choice, 8-inch size

Instructions

  1. Mash the avocado and lemon juice in a medium bowl until smooth.
  2. Stir in the Greek yogurt, garlic powder, salt, and pepper until combined.
  3. Gently fold in the cooked chicken and shredded cheese.
  4. Place one-third of the filling in the center of a tortilla.
  5. Top with one-third of the grape tomatoes and spinach leaves.
  6. Fold in the sides and roll tightly to enclose the filling, securing with a toothpick if needed.
  7. Repeat with the remaining tortillas and filling.
