Ingredients

  • 1 tablespoon kosher salt
  • 1 tablespoon freshly cracked ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon light brown sugar
  • ½ teaspoon red pepper flakes
  • 1 tablespoon steak seasoning
  • 2 ribeye steaks, ~1.5 lbs.*
  • 4 tablespoons unsalted butter, room temperature
  • 1 tablespoon chopped fresh thyme
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil, divided

Instructions

  1. Mix the steak seasoning ingredients in a jar or small bowl.
  2. Remove the steaks from the fridge and dry both sides with a paper towel.
  3. Season each side with about 1 tablespoon of steak seasoning, massaging it in.
  4. Let the seasoned steaks rest on a plate at room temperature for 30 minutes to 1 hour.
  5. Prepare the garlic herb butter by mixing butter, thyme, and garlic in a small bowl. Set aside.
  6. Heat a large cast iron skillet on high heat for about 5 minutes until very hot.
  7. Add 1 tablespoon of olive oil to the skillet.
  8. Place one steak in the skillet and sear for 3 minutes, then flip and sear for an additional 3-5 minutes.
  9. Add half of the butter mixture to the skillet, spooning the melted butter over the steak until cooked to your liking.
  10. Transfer the steak to a clean plate or cutting board, letting it rest for 15 minutes before serving.
  11. Wipe the skillet and repeat steps 7-9 for the second steak.
