  • 2 tsp baking powder
  • 2 tsp pumpkin pie spice
  • ¾ tsp sea salt
  • 2 large eggs
  • ⅔ cup unsweetened applesauce, or cottage cheese or greek yogurt
  • ½ cup pure maple syrup
  • 4 tbsp avocado oil
  • 2 tsp pure vanilla extract
  • 1 ½ tbsp fresh ginger, peeled and grated
  • 1 ½ cups grated carrots

Instructions

  1. Preheat your oven to 350 degrees F and line a 9” x 5” loaf pan or 8” x 8” square baking pan with parchment paper.
  2. In a high-powered blender, combine the oats, baking powder, pumpkin pie spice, and sea salt. Blend on low speed for about 60 seconds to create a flour texture.
  3. In a large bowl, mix together the eggs, applesauce, maple syrup, avocado oil, and vanilla extract until smooth. Stir in the grated ginger and carrots.
  4. Combine the flour mixture with the wet mixture, stirring until well blended and smooth.
  5. Pour the batter into the prepared baking dish.
  6. For a 9 x 5-inch loaf pan, cover with foil and bake on the center rack for 50 minutes. Remove the foil and bake for an additional 10-15 minutes until the cake is fully cooked.
  7. For an 8-inch square or round pan, bake on the center rack for 30-40 minutes until cooked through.
  8. Check doneness with a thermometer; the cake should reach an internal temperature of 190 degrees F or higher.
  9. Let the cake cool to room temperature before slicing and serving.
