  • ¾ cup powdered sugar (85g)
  • 1 teaspoon milk of choice
  • ½ teaspoon pure vanilla extract
  • ¼ cup chopped pecans

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper or lightly mist with cooking spray.
  2. In a mixing bowl, cream the softened butter with the brown and cane sugars. Add the egg and vanilla, and stir until combined.
  3. Incorporate the flour, cinnamon, baking soda, salt, ginger, and allspice into the mixture. Stir until thoroughly mixed, then fold in the grated carrots.
  4. Scoop the cookie dough onto the prepared baking sheets, forming 12 even mounds (6 per sheet). Press the mounds down slightly to shape the cookies.
  5. Bake the cookies for 9-12 minutes until the bottoms are lightly browned and the centers are set.
  6. Remove them from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, mix the softened cream cheese and butter until smooth in a medium bowl. Add powdered sugar, milk, and vanilla, and stir until the mixture is smooth; adjust the consistency if needed with more milk or powdered sugar.
  8. Frost each cooled cookie and sprinkle chopped pecans on top.
