- 3/4 cup butter, softened
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- 1/4 cup semi-sweet chocolate chips
- 11 oz caramels (1 package, unwrapped)
- 1/4 cup heavy cream
Instructions
- Cream together softened butter and brown sugar until light and fluffy.
- Mix in eggs, vanilla extract, and pumpkin puree until well combined.
- Gradually add dry ingredients (flour, cinnamon, nutmeg, baking soda, and salt) and mix carefully.
- Spread 2/3 of the batter in a greased 9×13 inch pan.
- Sprinkle chopped walnuts and chocolate chips over the base layer.
- Melt caramels with heavy cream in the microwave until smooth.
- Pour melted caramel over the chocolate chips and walnuts.
- Dollop remaining batter over the caramel layer.
- Bake at 350°F for about 25 minutes until edges are golden and a toothpick comes out clean.
