Ingredients
- 4 small lobster tails (4–8 ounces each)
- ¼ cup (60g) melted butter
- ¼ cup (60ml) olive oil
- 1 tablespoon (5g) minced garlic
- 2–3 tablespoons (30-45ml) fresh lemon juice
- 1 teaspoon (2-3g) paprika
- 1 pinch (<1g) cayenne pepper (optional)
- 1–2 teaspoons (2g) minced thyme
- salt and pepper to taste
Instructions
- Combine melted butter, olive oil, garlic, lemon juice, paprika, cayenne pepper, thyme, salt, and pepper in a small bowl. Mix well and set aside.
- Cut the top of the lobster shell lengthwise down the center with kitchen shears, leaving the tail intact. Pry the shell apart gently and lift the meat over the shell.
- Brush the lobster meat generously with the garlic sauce.
- Place the tails in a 9”x13” baking sheet, cover with plastic wrap, and marinate in the fridge for 25-30 minutes.
- Preheat the oven to broil, position the baking pan on the upper-middle rack, and broil the lobster tails for 5-10 minutes until the flesh is opaque and firm.
- Remove from the oven and serve immediately with your choice of sides.
