Ingredients

  • 4 small lobster tails (48 ounces each)
  • ¼ cup (60g) melted butter
  • ¼ cup (60ml) olive oil
  • 1 tablespoon (5g) minced garlic
  • 23 tablespoons (30-45ml) fresh lemon juice
  • 1 teaspoon (2-3g) paprika
  • 1 pinch (<1g) cayenne pepper (optional)
  • 12 teaspoons (2g) minced thyme
  • salt and pepper to taste

Instructions

  1. Combine melted butter, olive oil, garlic, lemon juice, paprika, cayenne pepper, thyme, salt, and pepper in a small bowl. Mix well and set aside.
  2. Cut the top of the lobster shell lengthwise down the center with kitchen shears, leaving the tail intact. Pry the shell apart gently and lift the meat over the shell.
  3. Brush the lobster meat generously with the garlic sauce.
  4. Place the tails in a 9”x13” baking sheet, cover with plastic wrap, and marinate in the fridge for 25-30 minutes.
  5. Preheat the oven to broil, position the baking pan on the upper-middle rack, and broil the lobster tails for 5-10 minutes until the flesh is opaque and firm.
  6. Remove from the oven and serve immediately with your choice of sides.
