  • 3 pound (1.360) kg boneless leg of lamb, fat trimmed
  • kosher salt
  • black pepper
  • Early Harvest Greek extra virgin olive oil
  • 12 garlic cloves, 6 thinly sliced and 6 minced
  • 2 teaspoons dried rosemary, or 2 tablespoons minced fresh
  • 2 teaspoons fresh thyme, from 4 or 5 springs
  • 1 teaspoon dry oregano
  • 3/4 teaspoon sweet paprika
  • Juice of 1 lemon
  • 1 pound pearl onions, peeled (or shallots, if you prefer)
  • 1 cup dry red wine
  • 1/2 cup low-sodium broth, beef or chicken broth is fine
  • Fresh rosemary or thyme sprigs, garnish

Instructions

  1. Pat the lamb dry and season generously with kosher salt and black pepper on all sides. Let it sit at room temperature for 45 minutes to an hour if possible.
  2. Heat a large skillet over medium heat and add a bit of extra virgin olive oil. Once shimmering, add the lamb and brown it on all sides, about 7 minutes. Remove from heat.
  3. Cut slits into the lamb and insert slices of garlic. In a bowl, mix minced garlic, rosemary, thyme, oregano, and paprika. Add lemon juice and olive oil, then coat the lamb with this mixture.
  4. Place pearl onions (or shallots) in the bottom of a large slow cooker. Pour in the wine and broth, then top with the seasoned lamb.
  5. Cover the slow cooker and cook on high for 3 to 4 hours or on low for 5 to 6 hours until the lamb is fork-tender.
  6. Transfer the lamb to a platter, drizzle with cooking juices, and garnish with fresh herbs.
