- 1 tablespoon canola oil or neutral cooking oil of choice
- 1 pound lean ground beef
- 1 ½ teaspoons chili powder
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- ¾ teaspoon kosher salt
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- 1 small yellow or white onion ¼-inch diced
- 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
- 1 cup prepared salsa
- 6 burrito-size flour tortillas about 10 inches
- 2 cups (8 ounces) shredded monterey jack, sharp cheddar, or mexican blend cheese

Instructions
- Heat the oil in a large skillet over medium-high heat. Swirl the oil to coat the pan, then add the ground beef. Press the beef into a 1/2-inch thickness and let it sizzle for 3 to 4 minutes until a crust forms.
- Sprinkle the beef with chili powder, oregano, cumin, salt, garlic powder, and smoked paprika. Add the diced onion. Break up the meat into small pieces with a spoon or spatula, then continue cooking until the beef is fully cooked, about 4 minutes more.
- Stir in the black beans and salsa. Cook until the mixture thickens and the beans are warmed through, about 1 minute. Adjust seasoning to taste.
- To assemble, place a tortilla on a flat surface and add about 3 tablespoons of cheese down the center. Add a sixth of the beef and bean mixture on top, then add another 3 tablespoons of cheese.
- Fold the opposite sides of the tortilla up and in towards the center, then roll it up tightly to enclose the filling. Repeat with the remaining tortillas.
- To serve, heat a nonstick skillet over medium heat. Place a burrito seam side down in the skillet. Cook for 1 to 2 minutes until golden, then flip and brown the other side. Let cool for a few minutes before serving with desired toppings.
