  • ½ tablespoon cooking oil
  • ¼ cup bbq sauce
  • 1 pizza dough (14-16" size)
  • 4 oz monterey jack cheese, shredded
  • ½ cup bbq sauce (for spreading on dough)
  • 1 jalapeño, sliced (optional)
  • ¼ cup red onion, thinly sliced

Instructions

  1. Combine smoked paprika, garlic powder, salt, and black pepper in a small bowl.
  2. Rub both sides of the chicken breast with the spice mix.
  3. Heat cooking oil in a medium skillet over medium heat.
  4. Cook the chicken for 5-7 minutes per side, or until internal temperature reaches 165°F (74°C).
  5. Transfer chicken to a cutting board and let rest for 5 minutes.
  6. Chop the rested chicken into small bite-sized pieces.
  7. Toss the chopped chicken with ¼ cup BBQ sauce until evenly coated.
  8. Preheat oven to 450°F (232°C) and prepare the pizza pan.
  9. Spread ½ cup BBQ sauce evenly over the pizza dough.
  10. Sprinkle shredded cheese over the sauce, then top with BBQ chicken, jalapeño slices, and red onion.
  11. Bake the pizza for 10-12 minutes, until the crust is golden and the cheese is bubbly.
  12. Slice into 8 pieces and serve warm.
