- 1 ½ cups white whole wheat flour
- ½ cup coconut sugar
- ½ cup chopped walnuts, + more for topping
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda

- 2 large eggs
- ½ cup maple syrup
- ¼ cup unsweetened almond milk
- 2 tablespoons melted coconut oil
- 1 cup mashed banana, ~3 small/medium bananas
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350ºF and line a muffin tin with muffin liners. Optionally spray the liners with cooking spray.
- In a medium bowl, combine the dry ingredients and mix well.
- Add the wet ingredients (excluding coconut oil) to the dry mixture and combine thoroughly.
- Stir in the melted coconut oil until the mixture is smooth.
- Fill each muffin liner about three-quarters full and top with additional chopped walnuts if desired.
- Bake the muffins in the preheated oven for 20-24 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
