- ¼ cup + 1 tablespoon (75 ml) vegetable oil
- 1 teaspoon vanilla extract
- 1 ½ cups (190 grams) all-purpose flour
- 1 teaspoon baking powder
- ⅙ teaspoon salt
- 2 tablespoons apricot or lemon jam, for glazing (optional)
Instructions
- Preheat oven to 355°F (180°C) and prepare a 9-inch springform pan.
- Toss sliced apples with lemon juice and cinnamon.
- Mix all-purpose flour, baking powder, and salt in a bowl.
- Beat eggs and sugar until pale and fluffy.
- Gradually add vegetable oil, yogurt, and vanilla to the egg mixture.
- Fold in the flour mixture gently until combined.
- Fold in a third of the apples into the batter.
- Transfer batter to the pan, arrange remaining apple slices on top.
- Bake for 30 minutes, check for doneness with a toothpick.
- Cool for 10 minutes and glaze if desired.
