  • 1 teaspoon vanilla extract
  • 1 ½ cups (190 grams) all-purpose flour
  • 1 teaspoon baking powder
  • ⅙ teaspoon salt
  • 2 tablespoons apricot or lemon jam, for glazing (optional)

Instructions

  • Preheat oven to 355°F (180°C) and prepare a 9-inch springform pan.
  • Toss sliced apples with lemon juice and cinnamon.
  • Mix all-purpose flour, baking powder, and salt in a bowl.
  • Beat eggs and sugar until pale and fluffy.
  • Gradually add vegetable oil, yogurt, and vanilla to the egg mixture.
  • Fold in the flour mixture gently until combined.
  • Fold in a third of the apples into the batter.
  • Transfer batter to the pan, arrange remaining apple slices on top.
  • Bake for 30 minutes, check for doneness with a toothpick.
  • Cool for 10 minutes and glaze if desired.
