Instructions
- Boil, bake, or slow-cook chicken, then shred.
- Whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper for the vinaigrette.
- In a large bowl, add arugula.
- Mix in shredded chicken, pecans, and soaked red onion.
- Add sliced apples, crumbled feta, and dried cranberries.
- Drizzle vinaigrette over salad and toss gently.
- Serve on individual plates with extra dressing if desired.
