Instructions
- Preheat the air fryer to 340°F.
- In a large bowl, combine the sweet potato slices.
- Mix olive oil, garlic, salt, and pepper in a separate bowl; blend well.
- Coat sweet potatoes with the olive oil mixture evenly.
- Prepare muffin tins or foil cups and spray with cooking spray.
- Layer sweet potato slices in the tins, adding mozzarella in between.
- Mix panko, parmesan, and basil in a bowl; add melted butter to combine.
- Spoon the breadcrumb mixture over each stack.
- Cook in the air fryer for 30 minutes until golden and crispy.
- Let cool before serving; add sour cream if desired.
