- 1 ½ cups (160g) cauliflower rice
- ½ small red onion finely diced
- 1 cup (149g) baby tomatoes halved
- 1 ½ cups (195g) chopped kale
- salt and pepper to taste
- 1 tablespoon taco seasoning
- 4 bell peppers deseeded and hollowed out
- ½ cup (169g) shredded cheese
- chopped parsley or chives for garnish
Instructions
- Preheat the air fryer to 360 degrees F (180 degrees C) and lightly spray the basket.
- In a skillet, sauté onion for a few minutes, then add ground beef and brown it while stirring occasionally. Drain any excess grease and add taco seasoning.
- Incorporate diced tomatoes, cauliflower rice, and kale, stir-fry for 4-6 minutes until vegetables are soft. Drain any excess moisture from the mixture.
- Stuff the prepared bell peppers with the beef mixture.
- Place the stuffed peppers in the air fryer basket and cook for 10-12 minutes or until softened to your liking.
- Top with shredded cheese and air fry for an additional few minutes until the cheese melts. Serve warm garnished with parsley or chives.
