  • 1 ½ cups (160g) cauliflower rice
  • ½ small red onion finely diced
  • 1 cup (149g) baby tomatoes halved
  • 1 ½ cups (195g) chopped kale
  • salt and pepper to taste
  • 1 tablespoon taco seasoning
  • 4 bell peppers deseeded and hollowed out
  • ½ cup (169g) shredded cheese
  • chopped parsley or chives for garnish

Instructions

  1. Preheat the air fryer to 360 degrees F (180 degrees C) and lightly spray the basket.
  2. In a skillet, sauté onion for a few minutes, then add ground beef and brown it while stirring occasionally. Drain any excess grease and add taco seasoning.
  3. Incorporate diced tomatoes, cauliflower rice, and kale, stir-fry for 4-6 minutes until vegetables are soft. Drain any excess moisture from the mixture.
  4. Stuff the prepared bell peppers with the beef mixture.
  5. Place the stuffed peppers in the air fryer basket and cook for 10-12 minutes or until softened to your liking.
  6. Top with shredded cheese and air fry for an additional few minutes until the cheese melts. Serve warm garnished with parsley or chives.
