- 4 cups rotisserie chicken, shredded
- 1 can pinto beans, drained and rinsed
- 6 flour tortillas
- 8 oz red enchilada sauce
- 1/4 cup cilantro, diced
- 2 cups Colby Jack cheese blend
- 1 tbsp melted butter
- Sour cream, for serving
- Pico de gallo, for serving
Instructions
- Sauté onion and jalapeño in a lightly oiled pan until soft.
- Combine the sautéed vegetables with shredded rotisserie chicken.
- Heat pinto beans in a small saucepan until warm.
- Fill tortillas with rice, chicken mixture, cheese, beans, cilantro, and enchilada sauce.
- Roll tortillas tightly and brush with melted butter.
- Preheat air fryer to 360ºF.
- Air fry chimichangas for 6-7 minutes until golden brown.
